Bacon Potato Chowder
1 lb. bacon, cooked and cut into 1 inch pieces
2-3 C. new red potatoes, washed & cubed
1 C. chopped onions
8 oz. sour cream
1 1/4 C. milk
1 can cream of chicken soup
1 8oz. can of corn, drained
1/4 tsp. black pepper
1/4 tsp. thyme leaves
Throw it all in the crockpot and simmer all day until potatoes are tender

Split Pea Soup--Holly from allrecipes.com
Ingredients
* 16 ounces dried split peas
* 2 cups diced fully cooked lean ham
* 1 cup diced carrots
* 1 medium onion, chopped
* 2 garlic cloves, minced
* 2 bay leaves
* 1/2 teaspoon salt
* 1/2 teaspoon pepper
* 5 cups boiling water
* 1 cup hot milk
Directions
1. In a slow cooker, layer the first nine ingredients in order listed (do not stir). Cover and cook on high for 4-5 hours or until vegetables are tender. Stir in milk. Discard bay leaves before serving. I would use a whole ham and diced it up your self because I found the diced up ham a little tasteless. Otherwise, it tasted great.

Brown Sugar Slow Cooked Ham
2 cups brown sugar
One 5 pound cured bone in picnic ham
1. Spread about 1 1/2 cups of brown sugar on the bottom of the slow cooker crock.2. Place the ham flat side down into the slow cooker - you might have to trim it a little to make it fit.3. Use your hands to rub the remaining brown sugar onto the ham.4. Cover, and cook on Low for 8-10 hours.

INGREDIENTS:
1/4 cup olive oil
1 cup chicken broth
2 cloves garlic, minced
1 tablespoon paprika
1 tablespoon garlic powder
1 tablespoon poultry seasoning
1 teaspoon dried oregano
1 teaspoon dried basil
4 thick cut boneless pork chops
salt and pepper to taste
DIRECTIONS:
In a large bowl, whisk together the olive oil, chicken broth, garlic, paprika, garlic powder, poultry seasoning and basil. Pour into the slow cooker. Cut small slits in each pork chop with the tip of a knife, and season lightly with salt and pepper. Place pork chops into the slow cooker, cover, and cook on High for 4 hours. Baste periodically with the sauce.

INGREDIENTS:
1 pound sliced bacon, cut into thirds 1 (14 ounce) package beef cocktail wieners 3/4 cup brown sugar, or to taste
DIRECTIONS:
Preheat the oven to 325 degrees F (165 degrees C). Refrigerate 2/3 of the bacon until needed. It is easier to wrap the wieners with cold bacon. Wrap each cocktail wiener with a piece of bacon and secure with a toothpick. Place on a large baking sheet. Sprinkle brown sugar generously over all. Bake for 40 minutes in the preheated oven, until the sugar is bubbly. To serve, place the wieners in a slow cooker and keep on the low setting.

Melt-in-your-mouth Mexican Meat dish
4-lb chuck roast
1 tsp. salt
1 tsp. pepper
2 Tbsp. oil
1 onion, chopped
1 tsp. chili powder
1 tsp. garlic powder
1 1/4 cups diced green chili peppers
3/4 cup hot pepper sauce
water
1. Season roast with salt and pepper. Sear on all sides in oil in skillet. Place in slow cooker.2. Mix together remaining ingredients, except water, and spoon over meat. Pour in water down along the side of the cooker (so as not to wash off the topping) until roast is one-third covered.3. Cover. Cook on high 6 hours. Reduce to low 2-4 hours, until meat falls apart.4. Thicken sauce with flour if you like.5. This highly seasoned meat is perfect for shredded beef Mexican tacos, burritos, etc.

1 envelope Italian dressing mix
1 package cream cheese, softened
1 large can Cream of Chicken Soup (I use cream of mushroom)
1 4 oz. can of mushrooms, pieces & stems, drained
Rice or Pasta
Combine salad dressing mix, cream cheese, soup, and mushrooms in crock. Bury chicken breasts under mixture. Cook on low for 6 hours or high for 4 hours. Serve over rice or pasta.

Burgundy Beef

2-3 lb (or whatever size you like) chuck or shoulder roast
red wine
dry onion soup mix
Take the beef and set it fat side up and sprinkle on the dry onion soup mix. Pour in red wine (1/2- 3/4 way up to top of meat). Set on low after 6+ hours you have really tender juicy beef that does great with noodles or rice.

Sunday Chicken Supper - Debbie (from taste of home)
it was so easy and took 15 minutes to prepare .. a hit with the kids too.
4 medium carrots, cut into 2-inch pieces
1 medium onion chopped
1 celery rib, cut into 2-inch pieces
2 cups cut fresh green beans (2-inch pieces) - I used frozen
5 small red potatoes, quartered
1 broiler/fryer chicken (3 to 3-1/2 pounds), cut up - I used 4 boneless chicken breasts
4 bacon strips, cooked and crumbled - I used Bacon Bits - the real bacon kind
1-1/2 cups hot water
2 teaspoons chicken bouillon granules
1 teaspoon salt
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
Pinch pepper
In a 5-qt. slow cooker, layer the first seven ingredients in order listed. In a bowl, combine the water, bouillon, salt, thyme, basil and pepper; pour over the top. Do not stir. Cover and cook on low for 6-8 hours or until vegetables are tender and chicken juices run clear. Remove chicken and vegetables. Thicken cooking juices for gravy if desired. Yield: 4 servings.

Egg Casserole - Here is a yummy easy crock pot breakfast that is really good.
Egg Casserole ( serves 18)
1 1/2 bags (32oz. size) frozen hash browns ( the cubed ones work the best)
1 1/2 pound cooked ham, cubed ( can use browned sausage or cooked bacon if you prefer)
3/4 cup of diced onion
1 1/2 green pepper chopped ( unless you really like green peppers, I would use 1 small one diced) you can use yellow and red pepper too if you want
2 1/4 cups shredded cheddar cheese
18 eggs
1 1/2 cup milk ( whole works the best but can use whatever)
3/4 tsp salt
1 1/2 tps. pepper
Directions: Spray the inside of slow cooker with nonstick cooking spray. Place one third of the potatoes on the bottom. Add one third of ham, onion green pepper and cheese. Repeat layers ending up with the cheese on top.
In a large bowl beat eggs, milk and seasonings until well blended. Pour over the ingredients in the crock pot, cover and turn on low. Cook for 10-12 hours until casserole is set and eggs are cooked.
Oval crock pot works the best for this recipe but can use any type you have but you may have to adjust cooking time.

~Crockpot Lasagna~ -Suzy (Michelle's friend)
1 (26-ounce) jar prepared pasta sauce
1 (10-ounce) box lasagna noodles (10-12 noodles)
1 (11-ounce) container pesto
1 (15-ounce) container part skim ricotta cheese
1 (12-ounce) bag baby spinach
1 cup grated Parmesan cheese
16 ounces mozzarella cheese, sliced (I used 8 oz. of provolone)
1/4 cup water
Use a 4 quart slow cooker. Put a spoonful of pasta sauce (about 1/4 cup) into the bottom of your cooker and swirl it around. Add a layer of uncooked lasagna noodles (you're going to have to break them to make a layer). Smear ricotta cheese and pesto onto the noodles. Add a handful or two of baby spinach, and top with a layer of Parmesan and slice mozzarella cheeses. Repeat layers until you've run out of ingredients. The spinach is fluffy, so you're going to have to squish it down to make it all fit.
Before closing the pot, put 1/4 cup of water into the empty pasta sauce jar and close and shake. Pour this saucy water over the top of everything. Cover up and cook on low for 6 hours, or on high for about 3 to 4. You'll know it's done when the top layer begins to brown and the cheese is melted and bubbly. It will also pull a bit away from the sides. Taste-test a noodle to check texture. Uncover, and let it sit for 10 to 15 minutes before serving.

~Sweet & Sour Chicken~ -Debbie
About a pound of boneless chicken breasts cut up into 1 inch pieces
2-10 oz jars of sweet & sour sauce.
1 can of pineapple chunks-Drained
1-16 oz bag of frozen stir fry veggies.
Mix everything in the crock pot together.
cook low for about 5-6 hours
Make white rice and your done! Sweet and Sour Chicken!

Crockpot Mashed Potatoes
Peel and boil 5 lbs potatoes, drain, whip with butter. While still warm, add 8 oz sour cream and 3 oz cream cheese, light is okay but not fat free! Put in crock pot bowl and refrigerate overnight. Cook on low setting for 4-5 hours. Enjoy!

Barbecued Black Beans with Sweet Potatoes--Michelle M.
Makes 6-8 servings
Prep. Time: 10-15 minutes
Cooking Time: 2-4 hours
Ideal slow cooker size: 3-qt
4 large sweet potatoes, peeled and cut into 8 chunks each
15-oz. can black beans, rinsed and drained
1 medium onion, diced
2 ribs celery, sliced
9 oz. Sweet Baby Ray’s Barbecue Sauce
1. Place sweet potatoes in slow cooker.
2. Stir in additional ingredients.
3. Cover. Cook on High 2-3 hours, or on Low 4 hours.

Spray inside of 3-4 quart crockpot with nonstick cooking spray. Combine apples, cereal and cinnamon in crockpot and mix well. Stir together honey and butter and drizzle over apple mixture. Mix gently. Cover crockpot and cook on LOW 8 hours until apples are tender.
